In order to do this properly and legally you'd have to register as a charitable organization - how that's done depends where you live and are based. Without being a formally registered charity, you wouldn't be able to give out tax receipts for donations, and obviously few will donate to you as a result. If I can give $100 to a registered charity and get some back on my taxes, I'll do that before giving $100 to you and receive nothing in return.
Plus, this ensures some transparency - there are many sketchy charities out there that raise millions and give out thousands to those they claim to support, pocketing the rest. This is unfortunately quite common with veterans charities.
