Because most "angry" guests are vile little snots who want something for nothing and think if they pitch a fit, management will cancel their bill. When I ran a restaurant, and somebody howled, and I determined they were just trying to get off free, I flat out told them that they could pay their bill or I'd call the cops on them! Almost none ever tried to walk out without paying - cuz the first little bunch that did that - they were college frat brothers - were arrested, charged with theft of services, and fined AND jailed---and that little incident was reported in the local press. The four of them were expelled from college! Aren't you glad you never came to my restaurant and tried that shite?
Come on managers grow some!
