Are you asking whether the company has internal privacy procedures for employees and visitors or are you asking about some sort of product? There are hundreds of Apple and Google products and a simple answer about privacy, as implemented in each product, would be difficult if not also pointless.
Both the company has to better for the privacy. The Google is one of the best company for search something int this. I think Google is the best for all the aspects. Searching, quick research , and getting more information from this
If you will be concerned about your privacy, then might as well not get none. They both spy on you. I'm not sure if you've noticed, but the Facebook messenger app will turn on the camera and mic without your permission. Also, remember that one talking app that behind it, the camera would turn on and it was a guy looking at you?
So all I can say is that both don't give you enough privacy. When you pay by credit with itunes, what happens? Your name, birth date, and address, as well as your credit card number :)

The main business of Google IS SPYING on everyone. They spy you in searches, youtube, blogger, Google+, Hangouts, they read ALL your Gmail, Google Drive, your photos, documents, everywhere. So stay away from them if you want privacy.
Apple has no social sites, no search engines, etc.
Apple by a long shot.
Apple's primary job is to overcharge you for hardware. The software, the iCloud.... that's all secondary.
Google's job is to provide you information.... so the more info they have, the better they can (exploit you) do their job.
I think Apple has the best privacy.
I can't say for sure, I havn't tested or seen their systems. I would assume Apple seeing as pictures were taken off of there recently. Things like that can be very damaging for them and they should vastly improve security so that it doesn't happen again.
