I went to the post office with a bunch of parcels to post, i weighed them and all of them were light enough to be sent as large letters. So thats what I did as it was cheaper. I used the self service machine for this. So all the stamps printed out and I put them on the parcels. I didn't print out a proof of postage receipt. However, The people I sent the items off to are saying they have not received the items yet. So i dont know what to do? Was it because I used large letter stamps? Plus i didn't put a return address?

If they were parcels they were probably too large to go large letter, so the delay is because postage was underpaid. The recipients will get a card through their door asking them to pay extra (plus an admin fee of £1.20 per item). The items won't be delivered until they do. If they don't pay, the items will be destroyed if there is no return address.

Large letter is not just about the weight of the package, but about the size - it must not be more than 25 mm (about one inch) thick, or larger than an A4 sheet. If your packages exceeded those size limits, regardless of the weight, they will be delayed (it takes a couple of weeks to process things with the wrong postage) - and the recipients will then get a request for further payment before they can be delivered.

Not getting proof of postage when selling things is just stupidity. So is not putting a return address - if they are not delivered they will end up being sold at auction (in Belfast).

Obviously you did not pay sufficient postage as they were parcels and not large letters. If you had gone up to the counter, one of their dull assistants would have whipped out a letterbox and shown you that your parcels can't fit through that so you have to pay more postage.

As you did not even bother to put your return address, your negligence beggars belief - have you been living in a cave or something? How are they going to return the parcels to you now?

My guess is that they have thrown most of them into the dustbin rather than waste any more time on them so you will have to send out new parcels at your own cost and pay the correct postage this time around.
